Adequate 3-vat setup, chlorine test kit, sanitizer bucket, and thermometer.
Notes to address:
1. Signs need to be posted in the mens and womens restroom, stating that employees must wash their hands before returning to work.
2. Make sure to wash and sanitize the storage bin and ice scoop to the main ice machine in the back on a routine basis. The storage bin looked like it needed to be cleaned.
Discussed employee health policy and left a copy. Not sure if a corporate version is in place or not.

    Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
Comments:
Additional temperatures taken: (WIC foods) cheese 33, shake mix 35, lettuce 32, mac + cheese 33, mushrooms 32
(WIF foods) beef patties 7, 6, 8, chicken 8, steakburger 7. Adequate thermometer, 3-vat setup, chlorine test kit, and working containers of sanitizer. Good practices observed: handwashing, glove usage and changing, separate employee storage area.

    Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
