Delivery received, frozen food was frozen. No refrigerator food (PHF) on truck.

Violation: 3080 - Repeat Light intensity in walk-in refrigerator is 5.5 foot candles and in walk-in freezer 2.5 foot candles.
Increase light intensity to 10 foot candles or more in these storage places.
Comments:
Pan of "fully cooked bacon" on sandwich prep table did not appear to be fully cooked-the bacon was not crisp and the fat was still white. Company policy is for 2 day hold time out of temperature control. Six other pans of bacon and bacon in box in walk-in appeared "fully cooked". Manager discarded pan of bacon that did not appear fully cooked. Observed excellent handwashing practices by employees reporting to work and changing tasks. Observed "cook out" temperature monitoring-employee has good temperature monitoring technique, equipment/thermometer is accurate, appropriate type and correctly used. Employee knows required cook temperatues and knows/applies corrective actions that are appropriate. Observed time label on products held at ambient temperature.

Visit in response to customer complaint alleging found approx 1" stick (wood & visible bark) inside regular hamburger purchased this afternon. Spoke with general manager. We visually examined both cooked and remaining frozen patties removed from line after receipt of complaint. No evidence of wood, stick bark in any. Manager states will discard/return cooked/uncooked patties from the case.
