• 3180 - Floors in the dry storage room under shelving noted in need of cleaning.
  All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
• 2720 - Dumpster or outside refuse container was open or uncovered--dumpster lid appears to be damaged.
  Cover all waste containers when not in continuous use.
• 1440 - Repeat The following items are intended for household uses and are not approved for use in a commercial food establishment: chest freezer.
  Remove identified household food equipment from the establishment. All food equipment must meet American National Sanitation Institute, ANSI, or National Sanitation Foundation, NSF, listed or equivalent.
• 1560 - Repeat There is a floor mounted chest freezer and shelf in the kitchen that is not elevated off the floor or sealed to the floor. A cleaning hazard exists.
  Alter the installation of the equipment to allow easy floor cleaning. Make 1 of the following corrections: 1. Remove the equipment 2. Install casters 3. Elevate the equipment to a minimum of 6 inches off the floor 4. Seal the equipment to the floor
• 1720 - No chemical sanitizing test kit being used to ensure the chemical sanitizing solution used is at the proper concentration for the quaternary wiping cloths.
  Obtain a quaternary chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
• 2930 - Outer opening of the food establishment is not protected against entry of insects and rodents--gap at bottom of the screen door.
  Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
• 1180 - The food temperature measuring device (degrees F) located in the kitchen is not accurate.
  CORRECTED DURING INSPECTION-thermometers requiring calibration were removed from service.
