Pre season inspection as part of Summer Camp inspection. Cleaning needed throughout kitchen. New mop heads needed. Floor in employee bathroom needs repair.

Comments:
Pre season inspection. Self closer needed on employee bathroom. New mop heads needed. WIC & WIF need good cleaning before opening. Hot water observed not working in camper bathrooms. Paper towels and soap needed in camper bathrooms. Good overall cleaning needed of all floors and walls in kitchen, employee bathroom and dry storage before opening. Hot water at handsink observed at 110 +. Fire suppression system checked on 5/5/08. Two new hot holding units observed along with alarm on chemical dishmachine.

    Clean and sanitize these surfaces for food contact.
  • 2620 - Covered refuse receptacles needed in the following locations:- employee bathroom- handsink in kitchen
    Place covered refuse receptacles in the locations.
  • 3045 - A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees(employee bathroom)
    Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.
  • 3180 - The following Physical structures noted in need of cleaning:- floors under dishmachine-floors under 3 compartment sink- bowl storage area
    All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
Comments:
Discussed glove use, handwashing, employee heallth, date marking and the use of hair restraint. No cold or hot food available for testing as camp not officially open yet. EHS recommended that PIC have pest control service the kitchen before opening.

    Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
  • 2200 - Critical An air gap between the water supply outlet and the flood rim level in the sink at the ware washing machine is not observed.     Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Comments:
Ensure paper towels and soap available at all hand sinks prior to opening. Ensure all refrigeration is maintained at 41 degrees or below. Facility being renovated: new walk-in cooler being installed, employee restroom being installed, new ovens and hot water heater being installed.
