Observed the following: 4-5 grease laden containers of used cooking oil stored outside the back door; bag of soiled linens stored on the grass outside the back door with flies surrounding the bag; several pieces of unused equipment stored outside the back of the facility; numerous wooden crab baskets stored in the grass outside the facility (baskets were surrounded with flies); a steamer/fryer pot filled with soiled water sitting on top of the grease trap cover- there was a strong odor coming from this pot and flies surrounding it; soiled mops sitting outside the back door; soiled equipment such as stainless steel tongs on table and steamtable pans on the ground under the car port attracting flies; numerous crab baskets and other litter piled up next to the trash cans; numerous cardboard boxes on ground outside the facility.

    Ensure the rear door seals completely to prevent the entry of insects into the establishment.
  • 3170 - Missing floor tiles in the walk in cooler.
    Replace floor tiles in the walk in cooler. PIC stated tiles will be replaced shortly now that the source of the moisture has been located.

Ensure employees are properly trained in mixing and testing sanitizer.
PIC stated chest freezer is no longer being used and is in the process of removing it from the property.

Comments:
Delivered and reviewed inspection report from 6/16/09.
Also, observed the following items from 6/16/09 to be corrected:
3270- Pests- Harborage Conditions. Harborage conditions outside have been eliminated. The outdoor area behind the building has been cleaned up and all equipment has been removed. Numerous flies remain behind the building. Fly bait is being used to try and eliminate the fly population.
3300- Premises- Trash and litter behind the building has been removed. All unnecessary items and unused equipment has been removed.
The other items noted in the report dated 6/16/09 have not been inspected today.

  • 0470 A 4 - Observed the following food was observed stored without being in packages, in covered containers, or wrapped: Breading stored in stainless steel container on top of the refrigerator.
    Store food in packages, covered containers, or wrappings.
  • 0620 - Observed barrels of seafood seasoning and a chest freezer filled with foods stored outside under the carport.
    Relocate food storage to an approved area. Foods are not permitted to be stored outside.
  • 0820 A 2 - Critical The following foods stored in the refrigerator near the back door cold holding at improper internal temperatures: Crab cakes 45'F, Fish 47'F, Oysters 49'F.
    Cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria.
  • 0960 1 - Critical The food contact surface of the trash bag used for the storage of seafood seasoning is not safe.
    Replace the trash bag with a food grade storage bag to prevent the migration of deleterious substances, or transference of colors, odors, or tastes to food.
  • 1320 - Could not locate thermometers in several refrigeration units.
    Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Provide an insect control device that retains the insects within the device (covered device). Improper design of the device and dead insect collection tray could allow dead insect parts and injured insects to escape, rendering the device itself a source of contamination.

    Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3.     Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.
  • 3330 - Critical Observed a spray bottle of blue liquid with an odor of glass cleaner labeled as "Sanitizer".
    Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

Discussed:
Reuse of manufactures containers for food storage. A container in the reach in freezer labeled "crab cakes" was used for the storage of fish. Manufacturer containers may not be reused for food storage.
Food handlers' gloves are for single use and cannot be re-used once removed from hands.
Wooden mallets- they are okay to use 1 time, but they are made of an absorbent material and cannot be easily cleaned and sanitized.
Discontinue the use of scented bleach for sanitizer. Provide regular unscented bleach
Food preparation may not be conducted outside. All food prep, including handling of crabs, must be conducted inside the main facility. Only covered containers of crabs may be taken outside into the steaming truck for cooking and then immediately brought back inside the main facility for preparation (packaging, serving, etc.). All food and equipment must be stored inside the facility.
Snowball operation in the shack outside- the manager stated that this is operated by someone that is not affiliated with her business. Advised manager to have the operator contact the health department for permit of this facility, if possible.

  • 2250 - There is no utility sink or curbed cleaning facility designed for the cleaning of mops or similar wet floor cleaning tools and for the disposal of mop water and similar liquid wastes.
    Install a utility sink or curbed cleaning facility designed for the cleaning of mops or similar wet floor cleaning tools and for the disposal of mop water and similar liquid wastes. Prior to installing additional plumbing fixtures the permit holder must apply and gain approval through the necessary regulatory agencies.
  • 2600 - The outdoor refuse container is stored on absorbent material. Refuse containers are stored on grass.
    All refuse containers are to be stored on smooth, nonabsorbent material that is sloped to drain.
Comments:
Please send at least one food employee to food safety training. Questions regarding food safety were answered by PIC correctly, however additional food safety training would be beneficial.
All other items listed in inspection dated April 28th, 2008 have been addressed. Thank you!
Facility's permit is valid until August 12, 2008, or until a new septic/drainfield system is installed and approved by the health department.

May 08, 2008 (Follow-up)

Comments:
The trailor located in the rear of the building is now approved for use to steam crabs. A coat of varnish has been applied to all exposed wood. A coat of semi gloss paint will also be applied.
All gaps in the floors, walls and ceiling have be screened in.
