  • 3180 - Repeat Ceiling in the kitchen noted in need of cleaning. Walls behind sink are producing profound mildew growth.

  • 1780 - Critical Vegatable Slicer food contact surfaces/utensils were not observed cleaned between uses with raw fruits/vegetables and potentially hazardous food.
    Clean food contact surfaces of equipment and utensils between and after uses to prevent cross contamination.
  • 3030 - No disposable towels were provided a the hand washing lavatory by the 3 compartment sink.
    Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • 1800 - The nonfood contact surface of the cabbage shredder had accumulations of grime and debris.
    Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • 3080 - Less than 10 foot candles of light was noted in the walk-in freezer.
    Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
  • 2930 - Outer opening of the food establishment is not protected against entry of insects and rodents (Back door by cleaning supply door).
    Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
  • 1960 - Hot trays were found stacked while wet after cleaning and chemical sanitization.
    Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • 3180 - Wall behind dishmachine and 3-compartment sink with active mildew growth.
    All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food.   • 2810 - Numerous areas throughout facility (dishmachine, cove molding in large walk-in, kettle area) floors and cove molding in extreme disrepair. This causes large amounts of standing water, odors and dangerous environment.

  • 1770 - Repeat Observed accumulations of grime and debris on the following food contact surfaces: MICROWAVE IN THE STAFF KITCHEN AND SHELF IN THE MEAT REFRIGERATOR.
    Clean and sanitize these surfaces for food contact.
  • 1770 - Repeat The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: MILDEW ACCUMULATED ON THE VENTILATION SYSTEM IN REFRIGERATOR TWO AND FROZEN CONDENSATION BUILD UP IN THE WALK IN FREEZER.
    Maintain nonfood-contact surfaces of equipment clean.
  • 3170 - Repeat FLOOR COVING AND FLOOR TILES THROUGHOUT THE ESTABLISHMENT ARE not maintained in good repair
    Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
Comments:
Overall sanitation is satisfactory. The current manager is being promoted and a new manager, Mike Goins, will be in place next week. There are new floor plans in effect, they just have not decided on who and when they will take place. The flooring will continue to be an issue until renovation takes place.

    Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.

Comments:
Overall sanitation good. Flooring and cove molding in dire need of being fixed/replaced. Spoke with food service manager and he stated that they area in the process of getting new flooring. Fix all repeat violations by time of next inspection.

  • 2530 - The grease trap is in need of cleaning. Omitting a foul odor.
    Clean grease trap, recommend increasing frequency of cleaning.

Floor is scheduled to be reinovated in the fall 2003.

Overall sanitation good. Cleaning in progress. CFM states that funding for maintenance request for repair of floors, walls, & junctures have been approved; awaiting for start date of repair.
