#140 was corrected by training/retraining employees on handwashing requirements followed by reinforcement during work. #2270-carbonators have been equipped with atmospheric backflow prevention devices as required.

  • 0140 - Critical Employee prepared raw chicken with gloves on, removed gloves but failed to use soap when washing hands before putting on new gloves and handling ready to eat food. Employee failed to dry hands after washing them, before putting on gloves.
    Correct by retraining employees to wash hands using soap and warm water for 20 seconds, then dry with paper towel before putting on gloves.

Observed good cooling procedure, grilled chicken (197 degrees) was cooled on tray in freezer to 41 degrees in <1 hour.

April 16, 2009 (Risk Factor Assessment)

Comments:
Sliced tomato and sliced cheese at sandwich prep table are in container on ice. Both are 45 degrees. Employee states that containers are depleted within 1 hour and old product is not carried over. Since this procedure does not keep the tomatoes or cheese <41 degrees, you should use time as a public health control-you need written procedure and method of monitoring time. Discard tomatoes or cheese that are held >6 hours (if temperature is 41 degrees or less at beginning and doesn't exceed 70 degrees). Need ASSE1022 (atmospheric backflow prevention device) installed on carbonators. Lemons used for lemonade were not washed before cutting. You need to wash produce prior to cutting or using unless delivered "prewashed".

    Corrected by replacing battery.
  • 1890 - Corrected During Inspection Critical Quat sanitizer in 3rd sink is<200 ppm.
    Corrected by refilling sink with correct dilution of concentrate. (solution is dispensed at 200 ppm from nozzle, do not further dilute it). Use chemical test strips to monitor this.
  • 0800 - Corrected During Inspection Critical Large lexan container of chicken nuggets and tenders cooked 12/16 were 50-51 degrees in walk-in refrigerator.
    Corrected by discarding. Cool hot PHF/TES from 135 to 70 degrees in 2 hours or less-use shallow pans that are not tightly covered, metal cools better than plastic; finish cooling to 41 degrees or less in next 6 hours. Use your thermometers to monitor cooling process-once food is at 41 degrees you can place it in storage container.
Comments:
Discussed employee health. Employees that are sick should not work-see handout. Practice very good handwashing-wash in handsin with soap, use paper towels to dry hands. No bare hand contact with RTE food.
