Violation: 1680 - The water temperature in the manifold servicing the high temperature ware wash machine was above the maximum allowable level of 194°F. The thermostat read 195-200
Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

Post-construction inspection with contractor. Will need to return to conduct a pre-opening inspection when all refrigerator equipment is up & running. Also need to have someone on hand to operate the dishwasher to ensure it is operating properly. Will need copy of Certificate of Occupancy from Building Inspector prior to issuing a permit.
