• 0820 A 2 - Critical reach-in cooler is not keeping a low enough temperature
  adjust or service cooler to maintain 41'F or colder for kept products; preferably 35 to 38'F abient air temperature
• 1060 - shelving in dry storage room is unfinished fiber board
  paint shelving with enamel type paint; recommend epoxy type paint
• 1530 - chemical test kit for "Quats" sanitizer is missing
  obtain and use test kit to check proper sanitizer strength; use 200 to 300 ppm strength for all uses
• 3030 - Corrected During Inspection kitchen hand sink is not suppied with disposable paper towels
  restock paper towels @ hand sink

• 3220 - Mops not hung up to air dry.
  Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

• 0960 1 - Critical Observed home style refrigerator in use.
  Replace with commercial type when replace is necessary
• 1150 - The nonfood contact surface of the storage room shelving is not designed or constructed to be easily cleanable.
  Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices.
• 1190 - The ambient (air/water) temperature measuring device (degrees F) located in the refrigerator is missing.
  Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
• 2910 - Observed live juvenile roach in kitchen
  Treat establishment for possible roach infestation

• 0450 - Critical Employees observed handling ready-to-eat (RTE) food with their bare hands.
  Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

  store items 6" off of floor
• 2620 - There are refuse containers in the kitchen without covers.
  All refuse containers are to be fitted with snug lids.
• 3030 - Repeat No continuous towel system that supplies the user with a clean towel has been provided.
  Hand drying devices such as individual disposable paper towels, a Continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
• 3170 - trim on wall is not maintained in good repair
  Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

  replace thermometers with approved, accurate thermometers
• 1530 - no chemical test strips available for checking sanitizer strength
  provide chemical test strips for "quats" type sanitizer in use
• 2310 - Critical kitchen hand sink is blocked by trash can sitting on top of sink
  remove trash can from sink so sink is available for hand washing at all times
• 2810 - walls in kitchen are in need of cleaning and painting. Currently they appear to have an unapproved flat type finish which cannot be properly cleaned.
