Violations:
  • 0080 - Corrected During Inspection Critical The management was not able to answer our questions about policy regarding employee health situations.
We reviewed the chart, which we handed out previously, about policy regarding employee health situations. This corrected the violation.
  • 0380 - Corrected During Inspection Critical There was onne can of kidney beans, and one can of chicken broth, each with a dent in the side seam, but being stored on the shelves where canned foods intended for service to the public are beilg stored.
Cans with dents in top, bottom, or side seams may not be used for service to the public. Cans with dents in top, bottom, or side seams need to be discarded immediately when they come into the establishment. Alternatively, they may be stored in a special area, designated by a sign which says "damaged cans only," until they can be returned for reimbursement. (The sign can be hand-written.)
Comments:
Handwashing, and dishwashing, facilities were being maintained correctly. No food temperature problems were observed.

Violations:
  • 1080 - Corrected During Inspection There was a wisk in one of the kitchen utensils drawers which had a wooden handle with a "crack" running down the side of the handle, rendering the handle no longer easily cleanable, at the bacterial level..
We do not allow the use of kitchen utensils which are "worn-out" so that they are no longer easily cleanable. The wisk was immediately discarded by the foodservice manager.
  • 1750 - Corrected During Inspection In the 2-door hobart reach-in refrigerator, there was a white plastic bucket, with commercial labeling on the outside of it which says "sour cream," but, instead, contained green beans.
These white plastic buckets are intended for a "single-use" only, by the manufacturer. We do not allow these buckets to be re-used for storage of any food except the food which originally came in the bucket. These buckets no not stand up to repeated dishwashing. Use tupperware, or some other more durable storage container.

Violation: 0690 - Corrected During Inspection There are several potted plants on the window sill in the kitchen.
Potted plants are not allowed in kitchen, food prep, and food storage areas. The potted plants were immediately removed from the kitchen area by the management.

Violation: 0380 - Critical There were two 16 oz. cans of cranberry sauce with dents in side seams, and one can of 3 lb. 2 oz. tomato soup, and one can of 15 oz. "mixed fruit," with dents in top seams, stored intermixed with canned foods intended for service to the public.
Cans with dents in top, bottom, or side seams may not be used for service to the public. A special area needs to be designated for "damaged cans only," and cans need to be inspected for damage, by the foodservice employee, as they come in. Damaged cans need to be returned for reimbersement, or discarded. There needs to be a sign in the special storage area, designated for damaged cans only, which says "damaged cans only" (sign may be hand written.)
