- 0070 - Teaching staff entering the food preparation, food storage, and/or warewashing areas are not in compliance with this Regulation.
Establish a barrier to food contamination by Informing employees, delivery and maintenance persons and pesticide applicators to comply with this Regulation when entering areas of the food establishment where food and food contact items are exposed. Individuals present in areas of a food establishment where food and food contact items are exposed presents a potential contamination risk. - 0820 - Critical Repeat Cheeseburger hot holding at improper temperatures.
Hot hold potentially hazardous food at 140F or above to inhibit the growth of harmful bacteria. - 1570 - Repeat Thermometers in milk coolers were observed in a state of disrepair and damaged.
Replace the thermometers. - 2730 - The refuse container used to store refuse/recyclables has no drain plug.
Replace the drain plug to the refuse container.
All violations discussed for correction. HACCP, end of the day temperature and leftover logs reviewed.

Violations:
- 0820 - Critical Pizza and cheeseburger in the hot holding cabinet and the yogurt on the serving line were hot holding at improper temperatures.
Hot hold potentially hazardous food at 140F or above to inhibit the growth of harmful bacteria. - 1570 - Thermometer in the milk case was observed in a state of disrepair and damaged.
Replace the thermometer. - 1800 - The nonfood contact surface of the ice machine has accumulations of grime and debris.
Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
All violations discussed for correction. Please be aware effective October 2006 the Virginia Department of Public Health classifies cut and sliced tomatoes a potentially hazardous food. All cut and sliced tomatoes shall be held at 41 degrees or colder. Employees observed washing hands appropriately.
