Mop water dumped in storm drain per conversation with Mgr, informed Mgr to start dumping mop water in the janitor's closet drain. 2) Time control procedures not being documented, informed Mgr written documents has to be developed from items under time control. 3) Dishwasher just turned on, wash temperature was only 138 degrees should be 150 degrees per manufacturers data plate.

Selected critical violation inspection to renew permit. Handwashing, OK. Plumbing: no sewage problems today. Sanitization: Dishmachine gauges flucuate the entire cycle. You cannot determine at what temp the unit is washing. Worker did not know when I asked. Mixed results were taken when thermocouple pased through machine. Workers on site must be able to monitor unit. Three compartment sink is available. Maintenance has been called. Hot holding: 180 F corn, 178 F corn, 170/140 warmers. Place pizza and other foods on written time control policy. Cold holding: 34 F milk unit, 43 F American cheese in walk in. Maintenance arrived. He will be ordering a digital controller. Thermolabels were given to manager to check machine daily until unit is repaired. Datemarking discussed. Permit issued.
