Facility just finishing a busy lunch rush before inspection.
Overall facility organized.
Observations & Comments:
1) Facility has equipment that is not commerical grade (tupperware bowls, homestyle 4 burner range with oven etc). Please work to remove unused items from facility and elliminate noncommercial equipment.
2) Remember to wash hands after eating, smoking and changing tasks.
3) Please make sure all coolers have a thermometer that is working and easily accessable. Recommend establishing (if not already) a temperature log and regular intervals (meats, onions, chili, soft serve, and coolers.

    Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days or within 4 calendar days if held at 45F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Correct immediately.
  • 1060 - Repeat The nonfood contact surface of the wood shelving in the walk-in, below drink dispenser and in dry storage room is not corrosion resistant, nonabsorbent, and/or smooth.
