Violation: 0800 - Corrected During Inspection Critical Chicken A La King noted not being adequately cooled to prevent the growth of harmful bacteria.
Cool potentially hazardous foods prepared from ingredients at ambient temperature to 41F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

December 10, 2007 (Routine)



Violations:
  • 0820 - Corrected During Inspection Critical Cooked potatoes, bologna, cooked carrots, and slaw (made in house) cold holding at improper temperatures.
    Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F or below.
  • 1450 - The ambient air temperature inside the small walk-in refrigerator was 48 degrees Fahrenheit.
    Refrigerated equipment must maintain food items at 41 degrees Fahrenheit. Note: The unit will not be used. Food items were discarded and moved to another unit. A work order had already been submitted for a new walk-in refrigerator.
  • 2260 - Critical Observed the pre-wash spray hose extend below the flood rim level of the sink basin at the garbage disposable sink beside the dishwashing machine.
    Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

Violations:
  • 1570 - Three compartment sink was observed in a state of disrepair and damaged. Middle compartment stopper lever broken - will not hold water.
    Repair the sink to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the sink, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • 1690 - The pressure gauge for the high temperature warewash machine was below 15 PSI. Gauge not working.
    Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. The range for proper operation is between 15 and 25 PSI. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

Violation: 3170 - #2 small walk-in cooler is not maintained in good repair. Floor is rusty and threshold is coming loose; also, door does not close properly.
Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Violation: 3080 - Less than 10 foot candles of light was noted in the small walk-in.
Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

February 15, 2006 (Routine)



Violation: 3180 - Floor beside the small walk-in cooler noted in need of cleaning.
All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • 1570 - Convection oven was observed in a state of disrepair and damaged.
    Repair the convection oven to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the convection oven, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • 1770 A - Critical The following equipment food-contact surfaces were observed soiled to sight and touch: inside convection oven.
