Remaining milk is discarded at end of breakfast. Ensure there is adequate facilities for handwashing (PIC mentioned that the front sink would be removed. Sink is currently not used as a handsink. Observed hands being washed in restroom, but there is no door self-closer that would lead to contamination of employee's hands.) Waffle mix has been added to menu without Health Department approval. Due to the use of the 2-compartment sink, facility is only allowed a limited menu. Any changes to the menu must be approved by the Health Dept. to ensure that it is in compliance with PIM#05-01. Discontinue the waffle station. With a 2-compartment sink, food prep must be limited to washing of whole fruit and reheating of commercially processed foods with minimal handling of foods. If facility would like to expand food service (such as the waffle station), a 3-compartment sink would be required.
