A work order has been issued for replacement thermometers to be placed in the freezer compartments. The unused fryer and steam kettle are scheduled to be removed from the premises and placed in a different school cafeteria. A screened door is to be installed during the Summer of 2007 between the mechanical room and kitchen. Provide an air gap above the flood rim of the floor drain of at least one inch or twice the diameter of the pipes for both the copper and PVC pipes extending from the ice machine to the floor drain. The kitchen staff is doing a good job! Keep up the good work.

  • 0470 - Critical Kitchen employee observed applying a cleaning agent from a spray bottle directly onto equipment surfaces that are adjacent to stored foods. The spray mist emanating from the spray bottle has the potential to contaminate stored foods.
    When using spray bottles of toxic substances, instruct the kitchen employees to dispense cleaners and sanitizers onto the wiping cloths before applying to equipment surfaces.
  • 1320 - The temperature measuring device located McCALL REACH-IN FREEZER is not easily readable.
    Provide an easily readable thermometer so employees can accurately read the thermometer.

  • 3080 - Repeat The light intensity in the food preparation area does not appear to meet the 50 foot candles required. Also a light bulb under the hood for the cookline was not working.
    Take steps to provide light intensity required y regulations. Replace bulb under cook line also to provide intensity required by regulations
  • 1780 - Critical Ice machine was showing evidence of mold growth and deposition of minerals internally.
    Clean ice machine internally to remove accumulations.
  • 0610 - Cleaning chemicals were stored adjacent to single serve items and above food stuffs in the dry store room. Move chemicals to a more suitable area that is below and away from food items and single serve items.

Violations:
  • 0480 - Bulk containers for flour/sugar not labelled.
    Bulk containers used for storage of such items must be labelled with the common name of the foodstuff.
  • 1750 - Containers that originally contained pork BBQ being used to store dry food items. The material that such containers are made from is not suitable to be washed, rinsed and sanitized to any great degree.
    Containers used to store dry goods that are not kept in the original container must be of a suitable material that can be regularly washed, rinsed and sanitized without leading to deterioration. Corrected at time of inspection.
  • 3080 - Repeat Lighting does not seem to provide the 50 foot candles required in a food preparation area.
    Provide suitable intensity of lighting to provide a minimum of 50 ft candles at food preparation surfaces.
  • 3150 - 2 dented cans of mixed fruit stored on shelves. Can of Whole Kernel Corn dented on rim stored on shelf.
    Damaged cans shold be removed from general storage area and placed in an area set aside for damaged goods for return to supplier or disposal. Violation corrected at time of inspection.
Comments:
In consideration of the age of the building the kitchen is being kept in good condition and is a credit to the staff working there.
