Reviewed the HACCP check list with the manager. The manager was given HACCP equipment/food temperature charts. A clean and well-organized kitchen. Keep up the good work ladies! Permit renewal issued

Comments:
A work order has been issued for replacement thermometers to be placed in the freezer compartments. The unused fryer and steam kettle are scheduled to be removed from the premises and placed in a different school cafeteria. A screened door is to be installed during the Summer of 2007 between the mechanical room and kitchen. Provide an air gap above the flood rim of the floor drain of at least one inch or twice the diameter of the pipes for both the copper and PVC pipes extending from the ice machine to the floor drain. The kitchen staff is doing a good job! Keep up the good work.

Waste grease barrel not in use at this time. Daily food/refrigeration temperature logs not maintained. Discontinue the practice of using a fly swatter in the food preparation areas. Recommend a screen door between the mechanical room and the kitchen to prevent access of pests such as flies. PERMIT RENEWAL NOT ISSUED AT THIS TIME. Correct all cited violations before premit renewal follow-up inspection takes place on 29 September 2006.
