    Train staff to routinely audit food temperatures in all refrigeration units with a calibrated chef's thermometer or digital equivalent. COLD FOODS WITHIN 2 DOOR PREPARATION UNIT WERE EMBARGOED. OPERATOR VOLUNTARILY DISCARDED AND AGREED TO HAVE UNIT PROPERLY SERVICED. CORRECTED. Maintain cold foods at 41 F or less.
  • 0820 - Critical Pizza observed displayed outside in conjunction with a radio station promotion was hot holding at improper temperature (product rated 130 F).
    Pizza observed outside was immediately embargoed due to not meeting hot holding temperature and food protection requirements. OPERATOR VOLUNTARILY DISCARDED PIZZA. CORRECTED.
  • 3330 - Critical Working container of all purpose cleaner was not properly labeled.

  • 0830 - Critical Some potentially hazardous food packaged on 4/27/04 in the 2 door refrigeration unit are not properly dated for disposition.
    Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days or within 4 calendar days if held at 45F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. June 23, 2003 (Routine)

  • 1800 - The nonfood contact surface of the inside of the make unit and the exhaust hood filters had accumulations of grime and debris.
    Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • 0220 - Critical An employee was observed eating in areas where they may contaminate food, clean equipment, utensils or other items needing protection.
    Provide a designated area where employees may eat so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection. DISCUSSED WITH THE MANAGER.
  • 1450 - The walk-in cooler is not functioning properly and does not have the capacity to meet the food storage demands of the establishment. The compressor unit has iced over and has been adjusted to increase the temperature in the cooler in order to melt the ice. A five degree rise was observed (36 to 41 degrees) in a half hour.
    Provide additional areas necessary to maintain food items at 41 degrees or below. Improper food storage temperatures are a major contributing factor to foodborne illness. MANAGER STATED THAT THE TECHNICIAN WILL RETURN IN ABOUT 1 HOUR TO SERVICE THE UNIT. ALL FOODS HAVE BEEN RELOCATED FROM UNDER THE COMPRESSOR TO PREVENT CONTAMINATION FROM DRIPPING CONDENSATION. CALL THE HEALTH DEPT. WHEN THE UNIT IS REPAIRED. MANAGER AGREED TO MONITOR THE TEMPERATURE AND RELOCATE FOODS TO OTHER UNITS IF NECESSARY.
  • 2890 - Light bulb in near the 3-compartment sink is not shielded, coated, or otherwise shatter-resistent.
    Shield or replace light bulb with a coated or shatter-resistant bulb.
  • 3330 - Critical A working container of general cleaner was not properly labeled. The container was labeled as sanitizer.

Meanwhile, keep all foods in a location where they cannot be dripped on from condensation, and monitor the temperature of the cooler. A SITE VISIT WAS MADE ON 6/24/03 TO EVALUATE THE REPAIRS DONE ON THE WALK-IN COOLER. THE COOLER WAS OPERATING AT THE PROPER TEMPERATURE, BUT WAS STILL DRIPPING CONDENSATION. THE MANAGER VOLUNTARILY MOVED ALL OPEN FOODS FROM UNDERNEATH THE COMPRESSOR UNIT, AND AGREED TO MONITOR THE CONDENSATION PROBLEM.
