  • 1450 - The walk-in cooler is not functioning properly and does not have the capacity to meet the food storage demands of the establishment. The compressor unit has iced over and has been adjusted to increase the temperature in the cooler in order to melt the ice. A five degree rise was observed (36 to 41 degrees) in a half hour.
  • 2890 - Light bulb in near the 3-compartment sink is not shielded, coated, or otherwise shatter-resistent.
  • 3330 - Critical A working container of general cleaner was not properly labeled. The container was labeled as sanitizer.
  • 3170 - The ceiling tile in the back room is not maintained in good repair
  • 3380 - Critical The quaternary ammonia solution being applied to food contact surfaces does not meet the requirements of 21 CFR 178.1010. The solution measured greater than 400ppm.

The following violations have been corrected from the previous inspection: 1. Employees were not observed eating in food prep areas. 2. All containers of chemicals and cleaners were properly and clearly labeled. 3. All sanitizing solutions were the proper concentration (~200ppm quaternary ammonia). 4. The walk-in cooler is operating normally. No repeat critical violations were observed today.

All handsinks were stocked with soap and paper towels. Employee handwashing was appropriate. Call the Health Dept. when the unit is repaired. Meanwhile, keep all foods in a location where they cannot be dripped on from condensation, and monitor the temperature of the cooler. A SITE VISIT WAS MADE ON 6/24/03 TO EVALUATE THE REPAIRS DONE ON THE WALK-IN COOLER. THE COOLER WAS OPERATING AT THE PROPER TEMPERATURE, BUT WAS STILL DRIPPING CONDENSATION. THE MANAGER VOLUNTARILY MOVED ALL OPEN FOODS FROM UNDERNEATH THE COMPRESSOR UNIT, AND AGREED TO MONITOR THE CONDENSATION PROBLEM.
