Violation: 2930 - Exterior door in the dry storage area was observed to be not tight fitting.
Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

  • 2810 - Floor or floor covering in the back of the dry storage room is not smooth and easily cleanable (bare concrete).
    Repair or replace floor or floor covering to make it smooth and easily cleanable.
  • 3220 - Mops not hung up to air dry.
    Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
Comments:
All cold foods and refrigerators must be at 41f or below by 03/2007.
Label all spray bottles of chemicals properly.

  • 0450 - Corrected During Inspection Critical An employee observed handling ready-to-eat (RTE) food with their bare hands. Observed employee handling ready to eat watermelon with bare hands.
    Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • 1100 - The food contact surface of the dry stoarge containers is not smooth, contains cracks, chips, or pits and can not be easily cleaned. Lids of dry storage containers have cracks.
    Repair or replace the to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent buildup of food debris.
Comments:
Ready to renew health permit.

    Store all foods at least 6 inches off the floor.

    Shield or cover all lights for protection of foods that are exposed.

    Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning. Correct immediatly.
  • 0820 - Critical Milk cold holding at improper temperatures(57f).
    Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F (45F) or below. Correct immediatly.
  • 1900 - Critical When tested, Chlorine sanitizer was at a higher concentration of 100ppm in 3 compartment sink.
    Provide chlorine sanitizer at proper concentration of 50 ppm and immerse or expose food contact surfaces to sanitizing solution for adequate time. Correct immediatly.
  • 2000 - Repeat Single service items observed unprotected from contamination.
    Store single service items in its original protective packaging or inverted in an approved dispenser. Correct immediaty.
  • 2720 - Dumpster or outside refuse container was open or uncovered.
    Cover all waste containers when not in continuous use. Correct immediatly.

  • 2260 - Critical Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
    Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch. Correct immediately.
  • 2000 - Single service items observed unprotected (opened containers) from contamination in dry storage area.
    Store single service items inverted, in plastic, or in an approved dispenser. Correct today.
  • 1450 - Walk-in freezer was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
    Provide additional freezer capacity necessary to maintain food items at proper temperatures. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness. Correct within 90 days.
  • 0820 - Critical Cheeseburgers, cheese pockets hot holding at improper temperatures.
    Hot hold potentially hazardous food at 140F or above to inhibit the growth of harmful bacteria. Adjust thermostat of hot-holding cabinet to maintain proper temperatures. Corrected during inspection.
Comments:
Note- all potentially hazardous foods that are ready-to-eat must be labeled with a prep. and discard date. PHF RTE maintained between 42-45 degrees F must be discarded within 4 days, if maintained at 41 degrees F or below, it must be discarded within 7 days.
