    Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • 1320 - Repeat There was no temperature measuring device located in the refrigerator.
    Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • 1700 - Critical No detergent- sanitizer is available on premises. It appears that a sanitizing solution was not in use for sanitization of utensils and kitcenware.
    Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.Provide an appropriate test kit. To minimize workload you can move to all single service utensils.
  • 1770 C - Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces:cabinents, countertops, and sinks.
    Maintain nonfood-contact surfaces of equipment clean.
  • 3000 - Living/sleeping quarters are not separated from rooms and areas used for food establishment operation.Pastry trays are set up with food and washed in a 2 compartment sink located here.
    Living or sleeping quarters must be separated from areas used for conducting food establishment operations to preclude potential contamination of food and food-contact surfaces from poisonous or toxic materials, dust or debris, the presence of improperly designed facilities and equipment, and the traffic of unauthorized and/or unnecessary person or pets.
Comments:
No 2 compartment sink with a detergent-sanitizer or 3 compartment sink with a sanitizer is available. There is a 2 compartment sink located in sleeping/living quarters.There should be a separation of food service from sleeping/living quarters.PIC agreed to relocate food storage and preparation area .Limit foood service to pre-packaged foods or provide required sink. Remodel of the continental breakfast is to occur in near future according to PIC. A 2 compartment sink with a detergent-sanitizer or 3 compartment sink with a sanitizer shall be installed.

    Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • 3020 - Soap was not provided at the hand washing lavatory in the restroom.
    Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • 3030 - No disposable towels were provided at the hand washing lavatory in the restroom.
    Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
