Clean ice bin as often as necessary to prevent accumulation of mold/mildew.
- 0820 A 2 - Critical Several TCS (time/temperature controlled for safety) foods in top part of prep refrigerator were >41 degrees (cream cheese 45.5 degrees, tomatoes 50 degrees, sliced provolone 51 degrees, chicken breast 48 degrees).
Correct by ensuring TCS food is 41 degrees or less during storage/prep-use metal containers, do not overfill containers. It appears as if the equipment is operating ok-temperatures in bottom storage areas are ok. Food in top is exposed to room temperature and heat from toasters, etc. Use thermometers to monitor temperatures and take corrective action.
Comments:
Need ASSE1022 on carbonator.
