Violations: - 0550 - In-use utensils improperly stored between use.
Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135F.
- 0610 - Food stored in a location where it is subject to splash, dust or other contamination.
Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
- 2260 - Critical Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

This visit was made to conduct a follow up inspection for a change of ownership. Please Review the following comments:
1. Permit issued for food service, per the Prince William Health District. " PERMIT ISSUED" 2. Please conduct the following: * Provide additional lighting on the cook line - bulb out across from the vent hood. * Ensure the ice machine has the proper backflow prevention device. * Ensure the chemical dispensing unit at the mop sink has the proper backflow device. 3. Please disclose all foods items on the menu that will be offered under-cooked - Reminder statement in place. The menu must meet all requirements for the consumer advisory language. 4. If you have any questions, please contact me. * "PERMIT ISSUED FOR FOOD SERVICE"
