Comments:The following observations were made:
1. Improper cold holding of potentially hazardous foods such as cooked hamburgers, deli ham meat, and beef burritos inside the reach-in sandwich refrigerator. All potentially hazardous cold food must be held at 41 degrees Fahrenheit or below. The food was discarded by the PIC.
2. Improper hot holding of potentially hazardous foods such as hot dogs and Italian sausages. All potentially hazardous hot foods must be held at 135 degrees or above. The food was discarded by the PIC.
December 03, 2007 (Routine)
Comments:The following observations were made:
1. No hand soap at the handwashing sink behind the front counter.
2. No hand soap in the men's rest-room.
3. An opened plastic milk container stored on the ice inside the ice machine. Ice is a food product and nothing should be stored in the ice.
4. The following were observed out of temperature:
(1) Italian Sausage on roll grill display; 123 degrees Fahrenheit
(2) Hot Dog on roll grill display; 125 degrees Fahrenheit
(3) Ham, Cheese, Provolone Sandwiches in small sandwich refrigerator sitting on beverage counter; 50 & 51 degrees Fahrenheit (must be 41 degrees Fahrenheit or below)
(4) Cheeseburgers in small sandwich refrigerator sitting on beverage counter; 50 & 51 degrees Fahrenheit (must be 41 degrees Fahrenheit or below)
(5) Milk in display case of walk-in refrigerator; 47-50 degrees Fahrenheit
5. Small sandwich refrigerator on beverage counter; no thermometer inside to monitor the ambient air temperature.
