    Observation: Grease trap is not flush with the floor (sits below) and is beginning to collect debris from difficulty of cleaning. (It has been kept clean since last inspection.)
    Correction: Floor needs to be smooth, durable, and cleanable. Do something to prevent the collection of debris in this area.

    Observation: Wiping cloth bucket stored on the floor in various places.
    Correction: Store the wiping cloth bucket off the floor.

Inspection due to remodeled facility. Store is approved to open.
Please correct the following by next inspection:
- Grease trap cover needs to be built up to be flush with the floor. (Contractor is present and working on it.)
- Ceiling tiles are missing over the mop sink. (Installation is scheduled for today.)

  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: Dishes not being sanitized. Observed dishes washed & then stored to dry without a sanitizing step. Sanitizer strength not adequate in 3-vat sink.
    Correction: Set-up the sink properly (wash, rinse, sanitize). Use proper sanitizer strength (200ppm quat.). Wash, rinse, then sanitize dishes before storing to dry.
  • Mops - Drying Mops (corrected on site)
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
