Double-door freezer is not in operation during inspection. Maintenance scheduled to repair.
Chlorine sanitizer used; sanitizer concentration adequate.
Dry storage area satisfactory; foods dated as received.
Disposable single service items covered.

Comments:
Ice machine clean.
Sanitizer (chlorine) 100 ppm concentration.
Cook temperatures logged daily.
Dishmachine temperatures logged daily.
Refrigeration temperatures recorded daily.
NO VIOLATIONS!

September 03, 2008 (Routine)

Comments:
Food cook temperatures, hot/cold holding temperatures documented daily.
New Icee machine cleaned and sanitized weekly as specified by manufacturer.
Employee health policy implemented.
Date-marking practiced appropriately.
Clorax used as sanitizer for wiping down food contact surfaces. Concentration checked and within limits.
Dishmachine washing at appropriate wash temperature of 156 degrees F; however, rinse temperature below standard of 180 degrees F in 3 of 4 trial runs. Final rinse temperature ranged from 170 - 183 degrees F. Maintenance to be performed on unit as soon as possible. Daily dishmachine temperatures recorded daily reveal no violations to 180 degree rinse minimum.

Replace the drain plug to the refuse container.
Comments:
The facility is neat and organized
There is limited space in the freezer and dry storage area but the areas are kept straight and orderly
Sanitizer was between 50 ppm and 100 ppm when checked
Time is used as a public health control
Keep up the good job in the kitchen!!

Violation: 3380 - Critical Wiping cloth sanitizing solution being applied to food contact surfaces does not meet the requirements of 21 CFR 178.1010
Maintain chlorine concentration between 50-100 ppm.
Comments:
PIC knowledgeable of required chlorine concentration; however, solution weakens upon standing.
Cook temperatures, refrigeration and hot holding temperatures are recorded daily.
Date marking being used appropriately.
PIC aware of cooling procedures and hot/cold holding temperatures.
Time is practiced as a public health control. All foods discarded after 4 hours.
Observed employees using proper hygiene, disposable gloves, etc.
Dishmachine checked and operating properly; hot water used as sanitizer.
Facility clean and organized.
