Owner knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing and changing gloves during inspection. All ready-to-eat foods date marked as required. New employee asked food safety questions.
Equipment - Cutting Surfaces Observation: The cutting board(s) along the sandwich preparation unit is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Raw and ready-to-eat foods store separately in refrigerated unit in back. Employees knowledgeable on proper cooking temperatures and cooling of foods.Owner and employees should be commended for their efforts in assuring foods are handled in a safe manner at all times. Cooking raw meats and making soups. No violation noted during this evaluation.

All ready-to-eat foods date marked as required. This is a family owned and operated facility. Foods are made in house (signature items - fresh made baked goods, soups, and potato chips).
Equipment - Cutting Surfaces Observation: The cutting board on the sandwich preparation unit and microwave plastic bowls are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. The metal components of the lunch meat slicer need cleaned.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized. Slicer cleaned during inspection.
Physical Facilities in Good Repair Observation: An accumulation of ice was observed on the floor of the walk-in freezer.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
