Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
- 1100 - The food contact surface of the ice scoop is not smooth, contains cracks, chips, or pits and can not be easily cleaned. Observed broken in the handle area.
Repair or replace the ice scoop to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent buildup of food debris.
- 2730 - Repeat The refuse container used to store refuse/recyclables has no drain plug.
Replace the drain plug to the refuse container.

Review with manager about the proper hot holding of potentially hazardous food (PHF) at 140 ° F when the remaining food is to be cooled and frozen. Cooling of PHF's shall be cooled (1.) within two hours, from 140° F to 70° F; and (2.) Within four hours, from 70° F to 41° or less. Provide the conveyer speed on the data plate in feet per minute.
- 1610 - The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. The temperature measuring device was not reading the required 180 degree F.
This has been corrected since last inspection. The temperature measuring device is working correctly and reads 180 degrees on this inspection.

Clean food-contact surfaces of canopener no less than every 4 hours to prevent the growth microorganisms on those surfaces.

A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Elevate food storage onto approved shelving with minimum 6" legs or casters.
- 1330 - Repeat The data plate on the warewashing machine does not provide the conveyer speed for this conveyered machine.
Mark the conveyer speed on the existing data plate to provide the required operating specitication of the warewashing machine.
- 1570 - The can opener blade is working back and forth.
Disassemble the can opener, clean and sanitize the assembly, remove and replace the blade. Can opener blades must be kept sharp and in good condition to prevent creation of metal fragments that can contaminate food in the can when opened.

Segregate products for credit, redemption, or return (damage, spoiled or recalled items) from other food, equipment, linens and single-service and single-use articles being used in the establishment to avoid the mistaken use of these items.

Discontinue the reuse of single-use containers for food storage. Provide approved reusable food storage containers designed for your food storage needs.

Repair the Temperature Gauge to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the gauge, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Manager discarded the food and clean machine before putting back into service. The potential spread of illness is limited when food is discarded if it may have been contaminated by employees who are infected, or are suspected of being infected, or by any person who otherwise contaminates it.
