Operator is knowledgeable and responsive, with spacious facilities serving a student body of almost 600 students. Facilities are well maintained, clean, organized, and well stocked.
EHS recommends that the operator switch to using time as PHC for the serve line, documenting time until product is used or disposed.

  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: In use open drinking containers, screw cap drinking bottles, and employee food are being used in food prep and food serving areas.
    Correction: Employees may drink from a closed beverage container (cup with lid and straw only) if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles. Employee food must be stored and consumed in employee break areas. Employees cannot eat while performing food handling or sanitation duties.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Sweet potatoes hot holding at improper temperatures at the serve line.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. Food was rapidly reheated to 165F for 15 seconds. Serve lines in schools are advised to use time as public health control. EHS will contact school food program supervisor with recommendation to change HACCP plan and operation.
No deficiencies noted at inspection. New manager is knowledgeable, capable, and responsive, effectively maintaining a positive relationship with staff that encourages good communication. Facilities are clean, spacious, organized, and well stocked with good lighting. All staff evidence good working knowledge of food safety.

Facility is well-run, with knowledgeable staff who implement food safety & sanitation controls from well-established habits. Facilities are well-lit, organized, fully stocked, and efficiently run. All of the serve lines operate using time as PHC, with the 4 hour window starting from when the food is removed from the cook step. Cooking was complete for the day when inspector arrived.
A HACCP records review included HACCP plan, cook temps, receiving record w/ temps, salad bar temps, refrigeration logs, & time record of serve line PHC. Reminder to manager that digital and stem thermometers used for monitoring food temps must be calibrated as part of HACCP verification procedures. This step cannot be eliminated from the HACCP plan. If a thermometer cannot be physically adjusted when out of calibration, hand-written adjustments on the instrument will suffice, but units must maintain accuracy of no more than +/-2 degrees F. A check of the in-use digital thermometer found it to be accurate.

Facility is clean, organized, well stocked, with knowledgeable and responsive staff. Professionally managed. Facility uses time as public health control for the serving line, including the hot cabinet next to the serving lines. HACCP review conducted. HACCP plan present with current dated signatures. HACCP records reviewed: receiving log (including temps), refrigeration logs, cook temps, and dishwasher temps. Records are current and completed in real time. No deficiencies were noted. Mgmt is reminded to use sani-buckets for all wiping cloths.
Full school facility inspection conducted, evaluating restrooms, classrooms, utilities, water/sewer, water fountains, and maintenance. One water fountain was noted as having low flow and will be adjusted.

A HACCP plan could not be located during inspection
  • Equipment and Utensils, Air-Drying Required
    Observation: Lunch trays were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • HACCP Plans - When a HACCP Plan is Required-Shall have HACCP
    Observation: HACCP plan could not be located at inspection.
    Correction: Locate HACCP plan to be in accordance with USDA rquirements. Follow HACCP requirements for all food prep SOP's.
Pat is the most knowledgeable cafeteria head that I have dealt with in my time with the Health Department. No violations, keep up the good work. Also conducted a School Sanitation Survey & Inspection Report. Again no problems, Keep up the good work.
