    Observation: The handwashing facility located at the dish machine area was blocked, preventing access by employees for easy handwashing. Metal trays were stacked on top of the handsink.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation.

    Observation: There is no refuse container at the area immediately adjacent to one of the hand sinks near the elementary serving line holding units.
    Correction: Provide a refuse container for the disposal of paper towels at all hand sinks or in close proximity.
  • Insect Control Devices - Design and Installation
    Observation: Insect control device is located over a prep table, near the dishwashing area, where dead insects may be impelled or fall.
    Correction: Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens, and unwrapped single service and single use articles. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.

    Observation: The exit door near the elementary school serving line is not protected against entry of insects and rodents. Weather stripping towards the base needs to be extended to the base of the door.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Gaps exist along the floor-wall juncture in the dry storage area.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

All temperatures are internal unless otherwise noted. This facility is very well maintained and is very sanitary. Employee's have excellent handwashing and glove exchange practices.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The white bulk ice scoop is cracked.
    Correction: Replace.
  • Good Repair and Calibration of Thermometers
    Observation: The 4 door Traulsen at the front line has a damaged thermometer.
    Correction: Replace.
  • Refuse - Covering Receptacles
    Observation: The left red dumpsters lid and side door is open.
    Correction: Dumpster lids and side doors must be closed when the unit is not being serviced.

    Observation: The lid on one red dumpster are missing.
    Correction: Call waste management company and have them repair or replace the dumpster.

    Observation: Mops at the utility sink are not hanging to dry.
    Correction: Mops that are not being used must be hung so they are allowed to air dry.

    Observation: The door on the disabled refrigerator display unit does not close properly.
    Correction: Repair.

    Observation: The interior surfaces of the mechanical warewashing machine are soiled with limescale that may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.

The mistaken use of food from an unlabeled container could result in chemical poisoning.
