1. Salads and sandwiches are being prepped between 7:30-8:30 am each day. They are stored in a pass thru until meal service begins, and then placed on ice trays. Suggest cooling the products with the lids off and see if this speeds/aids in better cooling. Also suggest 'blast chilling' the foods in the WIF for 10-15 minutes, or at least store the items in the WIC until meal service approaches.
2. Make sure staff are covering the serving line food items between shifts of kids. Hot dogs, cheeseburgers, and chicken sandwiches are always hard to hold hot, but only a few were out on the line. All product in the hot box was well above 135 F and so a violation wasn't written.
3. Only one sandwich and one salad were stored out on the serving line ice tray during the inspection. Suggest having staff rotate the items back into the RIC every 20-30 minutes to help minimize temperature spikes. Only a couple of each item are prepped and sold at this facility on any given day.
4. Door on the dumpster needs to be closed when not being filled by staff.

    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Refuse - Covering Receptacles
    Observation: Dumpster or outside refuse container was open or uncovered.
    Correction: Cover all waste containers when not in continuous use.
Salads with sliced tomatoes must be held at 41 F or below.
Mashed potatoes must be reheated to at least 135 F. Recommended using boiling water prior to placing potatoes in the steamer, to achieve the proper temperature.

    Observation: Mashed potatoes hot holding at improper temperatures. Product was reheated.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.

  • Cooling Methods (corrected on site)
    Observation: Chicken Sandwiches to be used for salads the next day observed cooling in the reach-in cooler wrapped in foil with an internal food temperature of 123 degrees.
    Correction: ICE BATH. When cooling down TCS foods for cold-holding, start by reducing the portion size and place into a shallow metal pan or use an ice bath method.
A third full inspection of the facility could not be completed prior to the end of the school year.
