After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
Comments:
Employees observed washing hands & wearing gloves. Food thermometer available. Sanitizer in 3 compartment sink at acceptable level.

    Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • 3180 - Floor beneath deep fryers noted in need of cleaning.
    All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
Comments:
Observed proper handwashing procedures during inspection.

February 13, 2006 (Complaint)

Comments:
Complaint regarding possible septic line backup onto restaurant floor appears to be a misunderstanding. At the time of complainant visit, restaurant was hotwashing the floors in the kitchen area, a process that produces puddling on the floor from the hosing process and an unusual odor from the degreaser used. At time of inspection, floors were very clean and exhibited no sign of septic backup or standing water. Restaurant management and franchise corporate office were very responsive to complaint and inquiry from the Health Department.

    Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Replace the door gaskets on the hot holding cabinet in accordance with the manufacturer's specifications.
