    Discard the food at this time. Ensure all prepared RTE food is mark with the name and ""consume by"" date on the container at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served, sold or discarded within 7 calendar days or within 4 calendar days if held at 45F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Violation: 0470 - Corrected During Inspection Critical Employee working with letuce after rinsing with bare hands.
When handling a ready to eat food, a food item that will not be heat treated or rinsed after handling, utensils must be used. This could be done by using tongs, deli tissue, or gloves. Gloves are being used at this facility at the sandwich/biscuit prep area. These should be used when handling any ready to eat food.
Comments:
Fried chicken is no longer served at this facility. Previous violations have been addressed. Thank you. The walk-in freezer still has the issue of the ice build up, but now that the food has been rearranged is it is no longer a contaimination issue for the food and only a maintance issue. Discussed menu items, employee health, and sanitization of food contact surfaces. Focused on critical issues. Time is used for tomatoes-discareded after 2 hours on the line.

    Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.
  • 0240 - Employees observed working in the food service area without proper hair restraints. Visors are not an approved hair restraint, and pony tails longer than 6 inches need additional restraints.
    Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
  • 2000 - Repeat Single service items observed unprotected from contamination. Drink cup dispensers overloaded exposing the rim of the cups, and some cups not in dispenser or in plastic sleeves to protect from contamination from employees hands following the handling of money.
    Store single service items in its original protective packaging or inverted in an approved dispenser.
  • 3270 - Critical Methods are not being used to control pests. Back door sweep is damaged to the point that rodents and insects can easily enter the premises
    Repair or replace the door sweep. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
  • 0570 - Wiping cloths improperly stored between use.
    Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • 2210 - The backflow or backsiphonage prevention device installed on the @EQUIPMENT@ is not identified as meeting standards set by the American Society of Sanitary Engineering. Spray nozzle on mop sink hose following a single atmospheric breaker.
    Provide the approved backflow or backsiphonage device for the specific application and type of device to prevent contamination of the drinking water system. In this situation a double check valve with an atmospheric breaker is required. Remove the spray nozzle until an approved backflow device is installed.
  • 2890 - Light bulb in outside storage building not shielded, coated, or otherwise shatter-resistent. Missing end caps on the tube shields.
    Shield or replace light bulb with a coated or shatter-resistant bulb. Install end caps.
  • 1770 C - Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Floors in stockroom under the shelves,and the hand sink in the kitchen.
    Maintain nonfood-contact surfaces of equipment clean.
  • 0690 - Ice machine door propped open by a full trash can.
    Never prop the ice machine door open. Keep trash cans away from foods and cover full trash cans.
  • 2200 - Critical The distance between the air gap of the water supply inlet and the flood level rim of the wet well for ice cream scoop is less than 1 inch.
    Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.
  • 3350 - Critical Unnecessary poisonous or toxic materials found in the food establishment. Areosol insecticide spray cans in stock without a licensed pesticide applicator on site.
    Remove unnecessary poisonous or toxic materials.
  • 1770 A - Critical Ice dispenser shoot and drink nozzles have scum on the food contact surfaces..
    Clean daily to prevent mold formation.

Violations:
  • 2000 - Repeat Single service items observed unprotected from contamination. Cup dispenser overloaded exposing the lip of several cups to contamination from employee's hands following the handling of money.
    Store single service items in its original protective packaging or inverted in an approved dispenser.
  • 1570 - Freezer is leaking condensation to interior of refer unit.
    Have unit services to stop the leaking.
  • 1960 - Food storage pans were found stacked while wet after cleaning and chemical sanitization.
    Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • 0200 - Repeat Employees wearing jewelry on their arms and hands while preparing food.

If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.

  • 1770 - 1) Black mold growing on the inside of the ice machine, screws are rusting. 2) Build up of dirt and debris under cooking equipment. 3) Mold and dirt on the door seal of the refer unit at the deep fryers.
    4) Hand basin dirty1) Mold and rust contaminates ice. Empty machine and clean inside. Remove all rust or rusty parts and replace with new parts. Correction began during inspection. 2) The utility lines laying on the floor under the equipment is preventing proper cleaning of the floor. 3) Clean seal regularly to prevent build up of dirt or mold. 4) Keep the hand basin clean at all times.

Repair the @EQUIPMENT@ to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
