Always re-date all ready-to-eat foods once you have pulled them from the freezer so you know what shelf live you have left on your food items. The chlorine sanitizer at the 3-vat sink was good at 50 -100 ppm. Food holding temperatures were within the acceptable range. Meat sauce was observed cooling in a shallow pan. Remember to cooler foods from 135 to 70 degrees within 2 hours and from 70 degrees to 41 or less within an additional 4 hours.

Correct the above items today. Employee health was discussed along with a handout left with manager reviewing the reportable illnesses. All food temperatures were within the acceptable range. Food items were date marked and time control items were well marked. Employees were observed wearing gloves while handling food items.

Violation: 0840 - Corrected During Inspection Critical According to the ""consume by"" date on the prepared ready-to-eat (RTE) chicken salad in the refrigerator, the food should have been discarded 2 days ago.
Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
Comments:
The above item was corrected on the spot. The wiping cloths were observed stored in sanitizer at 50-100 ppm. Food temperatures were found to be within the acceptable limits. Fim has replaced the ceiling tiles and painted since last inspection. Clean facility
