Supply date markings on all foods kept for 24 hours or more.

Violation: 0220 - Corrected During Inspection Critical Observed a male employee drinking from a glass in the kitchen.
Employees must drink from a cup with a lid/straw.

December 29, 2008 (Routine)



Violations:
  • 3030 - Corrected During Inspection Observed the lack of paper towels at the bar handsink.
    Supply paper towels at the handsink.
  • 0470 - Critical Observed unwrapped raw chicken being stored with wrapped raw beef.
    Cover/wrap all foods; store foods separate from one another.
  • 1770 A - Corrected During Inspection Critical Observed utensils in the sheaths/belts (hibachi) that were encrusted with dry food debris.
    Wash, rinse, sanitize utensils prior to storage.
  • 0930 - Critical Observed the lack of consumer advisory/disclosure on the menus (consumer advisory is on back page with alcoholic beverages).
    Provide consumer advisory/disclosure on each page that has raw/undercooked foods/meats/seafood listed. (discussed this in length with the owner). New menus are on order.
  • 0480 - Observed the lack of identification labeling on the bulk containers/lids.
    Supply the identification labels.
  • 1530 - Observed the lack of a quarternary ammonia test kit on site (3 compartment sink).
    Obtain/use the test kit.
Comments:
Supply documentation for your fresh fish that you freezer. Hold fish at -4 degrees or below for at least 7 days (parasite destruction).
