September 2, 2009
After reviewing facility file with Environmental Health Manager, EHS spoke with assistant area coach via phone call regarding the drive-thru windows. When this store was built, the owner/operators opted out of installing a self-closing device on the pick-up windows and installed an air curtain instead. It has been documented in multiple past inspections that employees are turning the fly fan off since it is loud. Operator must do one of the following no later than 12/31/09 or the PERMIT SHALL NOT BE ISSUED:
1.) Hard wire the air curtain so employees can not turn the fan off and the fan will come on when the window is opened; OR,
2.) Install a self-closing device on the window

Beans and sauce on taco prep line were marginal temperatures--130-133* due to a problem with the heat well. Heat well adjusted via temporary repair and by end of evaluation sauce observed at least 156* and beans observed at 176*.

  • 0850 - Corrected During Inspection Critical Time is used for the control in the chicken hot holding cabinet-some pieces of chicken were 130F Tags are marked with the time that the chicken is to be used or discarded by. Found tags that said 11:30, 1:45 and 2:00 at 2:10 PM.
    Manager removed chicken and used her thermometer to determine if the pieces of chicken were at 135F or above and could be restaged for the pot pies. If they did not meet temp requirements they were discarded. When time is used as a control it must be properly monitored.
