Violation: 1510 - Corrected During Inspection The person in charge could not provide a food temperature measuring device. Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Comments:
At time of insperction the kitchen prep area appeared clean. All food and refrigeration units were within required ranges. (*=walk-in: delivery made at time of inspection). No raw foods. Foods delivered precooked and prepackaged. Use of food gloves, hair restraints, noted. Remember to date mark if foods are not consumed within 24 hours and dispose of within 7 days.

Elevate food storage onto approved shelving with minimum 6" legs or casters.

Kitchen prep area looked clean at the time of the inspection. Food gloves, hair restraints and sanitizer test kit noted. Foods delivered precooked, made and prepared daily and discarded within 24 hours if not consumed. Remember to clean microwave oven and can opener daily..

Violation: 1800 - Corrected During Inspection The nonfood contact surface of the can opener has accumulations of grime and debris. Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
Comments:
At the time of the inspection observed use of food gloves, date marking, hair restraints and sanitizer test kit. Pest control is done monthly. Fire extinguisher tag up to date.

At time of inspection previous violations were observed being corrected. Remember to monitor refrigeration temperatures to ensure unit's temperature hold at or below 41F

Violation: 2350 - Critical A recent repair to plumbing system components of the back hand sink are not in accordance with law. All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment.
Comments:
Observed use of food gloves, hair restraints, sanitizer test kit and date marking. Facility has employee health policy and consumer advisory. Remember to monitor refrigeration unit temperatures so that a temperature of 41F of below is maintained otherwise suggest to lower thermostat of to have refrigeration tech look at units. Also suggest to have thermometer in walk-in.

Comments:
This was a follow-up inspection. At the time of the inspection all previous violations have been corrected. Please monitor the temperature of the warewash machine so that the temperature is 120F or higher. Also remember to date marl after 24 hours of food preparation and dispose of after 7 days.

Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants.
- 0830 - Critical The prepared ready-to-eat (RTE) @FOOD@ in the refrigeration unit is not properly dated for disposition.
Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Discontinue the use of the ware wash machine until it is working properly. Initiate manual wash, rinse, and sanitize method to properly clean equipment and utensils. To minimize workload you can move to all single service utensils.

Comments:
Overall facility looked clean. Observed the use of food gloves, hair restrains, food thermometers and sanitizer test kits. Discussed and provided the person-in-charge with Employee Health Policy regulations. Remember to use tongs when dispensing lemon slices and to cover foods in refrigeration units when not in use. Monitor walk-in cooler to maintain unit at 41F or below. Suggested to have temperature logs for unit.

Spoke with Puritan rep, alarm at dishwasher is out of stock and will be available to be installed in approximately 5 days. Observed Cl- test kit for dishwasher, purchase quaternary ammonium test kit for three bay sink. Need copy of employee health policy. Reminder, all employees handling ready to eat foods, must wear gloves or use some other method to not touch the food.

Alarm at dishwasher; will be added this afternoon Pest control; Triple "S" out of Inwood WV Purchase sanitizer test kits (chlorine and quaternary ammonium) Hand wash signs are in house, but need to be installed All items from 3/11 & 3/20 inspection have been completed except: Need copy of C.O., Need copy of employee health policy, and need to finish cleaning and remove all maintenance equipment. Observed backflow on water line at soda.
