Comments:
Wiping cloth sanitizer and dish machine santizer were at the proper concentration. Employees were obseved wearing gloves while handling food. All food temps were good. Very Clean operation.

Violations: - 1530 - There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Obtain a quaternary ammonia test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- 2910 - Insect control device is located over dish machine where dead insects may fall.
Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens, and unwrapped single service and single use articles. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.
Comments:
Correct the above items within 5 days. Clean operation. Employees were wearing gloves while handling food. Good hand washing practices were observed.All food and equipment temps were good.
September 23, 2005 (Complaint)
Comments:
The purpose of this visit is to conduct a complaint investigation of possible cross-contamination. I spoke to owner who was unaware of the complaint. Complaint was there is a possiblity of cross contamination from raw chicken to the vegetables. I observed the meal stations set up for customers with one or two dishes at each station. If raw chicken is pulled from pan and pulled across the prep unit there could be some cross contamination. However, the vegetables at prep station are mixed with raw chicken by the customer in the process of making the meals and the vegetables are added to the chicken right after the chicken is pulled from the pans. So even if somebody pulls the raw chicken over and across the prep unit, all ingredients are mixed together at this time and prior to cooking anyway so there is no risk of foodborne illness if the customers cooks the meals as prescribed. Acceptable food handling practices were in place during this visit. A complete inspection was also conducted today. See inspection dated Sept. 23, 2005 for details.

Violation: 3080 - Less than 10 foot candles of light was noted in the walk in cooler and freezer. Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
Comments:
Finish coving by back door, replace lights in walk-in's, apply for health permit. Appoved for permit once all items have been corrected.

Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
Comments:
Plumbing and electric is not hooked up at this time. Finish suppling the soap, hand towles, trash cans, ect.
