Discussed the following with the person in charge (PIC): 1. Developing or providing written procedures for using time as a public (TPHC) for the pizzas held up to one hour at room temperature prior to cooking. The EHSS gave the PIC a template for written procedures when using TPHC. The EHSS observed the written procedures in the corporate training manual when the report was returned to the PIC. 2. Strongly recommend providing a timer for the third rack that is used to store prepared pizzas prior to cooking. The other two racks have timers attached to the racks to track the time when using TPHC. Observed good holding and reheating temperatures of foods and good handwashing practices by staff.
