    Observation: Wiping cloths not stored in sanitizer.
    Correction: Store wiping cloths in sanitizer when not in use. Use 1 capful bleach per gallon of water. Do not add soap.
  • Cooling Methods (corrected on site)
    Observation: Gravy observed in walkin cooling with lid on in large container. Gravy was still at hot holding temperature >135 degrees F.
    Correction: Cool foods properly before placing them in walkin. Use two stage cooling process and cool hot foods from 135 degrees F to 70 degrees F in 2 hours then from 70 degrees F to 41 degrees F within 2 hours.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Top of small reachin in wait station in need of cleaning..
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Observed dishes being dried with a cloth towel.
    Correction: Air dry all dishes and equipement so that sanitizer can be effective.
