Please cover lights as soon as possible to avoid glass shards in a food storage area in case of breakage. If the cover cannot be found, bulb sleeves with end caps can be obtained and used. Shield or replace light bulb with a coated or shatter-resistant bulb.
Comments:
Overall excellent sanitation. Good glove and utensil use, good food temperatures, sanitizer in place, 200 parts per million Cl, sanitizer bucket originally no residual but changed to 200 ppm Cl. Hood system professionally cleaned after last inspection, in the 3rd or 4th week of March by "Belcher".

    Roasts placed in refrigerator during the inspection. Roast surface temperature 36 F. Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41F . 2. Completely submerged under running water at a temperature of 70F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41F and raw animal foods shall not exceed 41F for more than four hours 3. As part of the cooking process

Comments:
Overall excellent sanitation. EHS arrived when staff completing packaging of meals on wheels. Good technique used to prevent bare hand contact of meals. Observed sanitizing, sanitizer in place at 200 parts per million Cl for the wiping bucket and 100 ppm Cl for the sanitizing sink. Cooks preparing meatballs and peas on stove, good technique to prevent bare hand contact.
Notes:
1) Discussed only the three compartment sink available for food preparation and dishes. Suggest adding a food preparation sink in the kitchen for rinsing foods, thawing etc. When the 3 compartment sink is used for food preparation the sink must be empty, clean and sanitized. After food preparation is completed, the sink must again be cleaned and sanitized. This is easily done if there are very few dishes or very little food preparation requiring a sink.
2) Discussed exhaust hood and ducting with assistant for operations and the building inspector and a message was left with the senior manager. EHS will follow up to ensure the exhaust system cleaning and safety are addressed.

Comments:
Overall good sanitation. Good food temperatures, good utensil use to prevent bare hand contact, sanitizer in place. Facility prepares about 85 meals per day for seniors that attend center and for shut ins. Coolers present for food transport. Temperature chart present for food temperature after cooking, last entry 13 November. Staff state temperature chart for cold holding units also present. Staff state cook temperatures today, 200 F. Suggest, keep temperatures recorded. Add at least one food item checked with a food thermometer to cold holding temperature chart.
-Facility prepares meals from frozen meats, some thawed in the bottom of the 2 door reach in refrigerator and some rinsed under cold water then cooked. 2 door cooks box includes, shell eggs for meal items (not batch preparation), dressings, leftovers, raw fruits and vegetables, and without thawing meats is full.
-Suggest obtaining additional refrigeration to safely thaw frozen meats. Currently all shell eggs must be moved up and all items in that area moved etc. to thaw meats.
Any hot leftovers kept are stored, dated and placed in reach in freezer.
-No small diameter stemmed thermometer present to check final cook temperatures of thin items such as hamburger patties.
*Obtain a food thermometer with a suitable small diameter probe as required in updates to VA food code effective 10/16/07.
-Storeroom and shelving for paper goods recently painted. New shelving to replace current shelving for dry storeroom present in boxes, not yet assembled.
