    Must keep all items cold held at 41 degrees at lower to reduce foodborne illnesses of public health concern
  • 0850 - Critical Hot holding of gravy not marked with time for discard to ensure hot hold did not exceed 4 hours. gravy temp at 131 degrees
    When using time as a public health control must mark with the time to indicate when the item is to be discarded (within 4 hours of putting it out for use)
  • 1700 - Corrected During Inspection Critical Buckets holding wiping clothes had diluted sanitizing solution inside less than 50 ppm
    Maintain sanitizing solution at 50 ppm to 100 ppm at all times for wiping cloth holding to reduce growth of foodborne illness
  • 1750 - Single use containers being used to store burrito mix, and lettuce (old pickle container), Tea in a bucket marked for paint ( may not food grade)
    Single use items are not to be re-used
  • 3045 - Corrected During Inspection No handwash signs posted in men's, women's or at handwash sink in the kitchen area.
    Post a handwash sign at all sinks in the restrooms and handwash sinks in the kitchen area
Comments:
Note:
Some of the food contact utensils are beginning to wear and fray on the handle recommended to replace them before they become to hard to keep clean. Replace with ones that have a smooth and easily cleanable surface on the handle
Employees were knowledgeable on the temperature checks that were recorded on a shift basis, and knew the cleaning frequency of the food contact utensils used at the grill.
One item to follow up on is the storage container for the tea food grade or not

Violation: 3180 - Floors in the food preparation area noted in need of cleaning.
All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Repair or replace the wall freezer door gasket in accordance with the manufacturer's specifications.
  • 1800 - The nonfood contact surface of the (1) areas around heat lamps; (2) vents in exhaust hood system; (3) inside microwave; (4) bun toaster has accumulations of grime and debris.
    Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • 2180 - Critical The plumbing system serving this food service facility has not been designed, constructed, and installed according to the Plumbing Code; handsink in food prep area has only hot water. Must have both hot and cold water.
    EHS will confer with his/her supervisor, determine scope of possible contamination of the water supply, and refer the matter to the building official's office.
  • 3020 - Soap was not provided at the hand washing lavatory in the men's restroom.
    Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
