Observed operation during rush. Good procedures to prevent contamination from the raw to the ready to eat. Thank you.

Violation: 0450 - Corrected During Inspection Critical Employees observed handling ready-to-eat (RTE) food with their bare hands. One in prep area making sandwiches and one at the front handling cookies.
Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
Comments:
Discussed risk factors for food borne ilness. Discussed employee health and hygene. Reviewed stores procedures for monitoring tempertures and time control for food products. Management has a good knowledge of food safety. Thank you.

There were no previous open violations to follow-up on. Tomatoes at prep table are maintained using time, versus temperature, as a control. Critical violations to be corrected immediately. Non-critical violations to be corrected by February 6, 2008.

July 12, 2007 (Critical Procedures)

Comments:
Facility uses time, versus temperature, as a control for the sliced tomatoes. This was a critical procedures only inspection that focused on food temperatures and employee hygiene, to include handwashing. There were no open violations to follow-up on. No violations noted during this inspection.

May 14, 2007 (Complaint)


Violation: 3180 - Women's restroom, on the evening of May 12, 2007, noted in need of cleaning. There were no violations noted during a physical inspection of the restroom on May 14, 2007.
Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner. Evening manager on duty on May 12, 2007 sent maintenance person in to clean the restroom as soon as she received the complaint. The complaint was registered in person with the manager and via a telephone call to the Health Department on May 14, 2007.
Comments:
Concerns from the complaint received on May 14, 2007 were discussed with the manager.

Sliced tomatoes are maintained by time versus temperature. Violation 1550 from the November 13, 2006 inspection has been corrected. Both violations noted during this inspection were corrected during the inspection. There are no open violations for this facility. Manager and staff's knowledge of food safety and actual demonstrated food safety practices, to include the wear of gloves when handling ready-to-eat foods, are commendable.
