    Protect food from cross contamination by storing food in packages, covered containers, or wrappings.
  • 3180 - floor in prep area below and behind grill and fryers, and behind storage shelves in rear storage area, noted in need of cleaning.
    All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
Comments:
Good handwashing procedures noticed during inspection.

    Tomatoes are potentially hazardous when sliced. All PHF's must cold hold at 41F or below. Tomatoes were discarded during inspection.
  • 1720 - Sanitizer test stripes are not available for Quat Sanitizer used in 3-vat sink.
    Obtain Quat sanitizer tests stripes to ensure the sanitizing solution is maintained at the proper solution.
  • 3045 - Corrected During Inspection A sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees

    Store wet mops hanging up.
  • 3340 - Critical Chemical bottle stored over single service food items in the front.
    This bottle was immediately moved upon mentioning it to the person in charge. Advised person in charge to ensure that chemicals are stored in such a way that they do not pose a threat to food or food-contact equipment.
Comments:
Person in charge informed me that the dumpster schedule is changing to accomodate trash on weekends. Dumpster area observed very full at time of boxes, trash and doors were open due to recent delivery and try to dispose of these items. Advised person in charge of changes to regulations for temperatures. This store is in compliance with the new temperatures.

  • 0610 - Items stored in walk-in freezer and back kitchen area on the floor.
    Store all items at least 6 inches off of the floor on shelving.
  • 1770 A - Critical Repeat Drink dispensers and ice chute by drive-thru window need to be cleaned- residue observed. Residue (pink mold) also observed in the ice chute in dining room.
    Clean these areas to prevent contamination to drinks and ice.

    Store single service products in designated area and keep them protected with covers while in storage to prevent contamination.

Comments:
Store was very busy prior to the beginning of this inspection. Good temperatures of food and equipment observed. 2007 permit issued.

    Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning. Replace two burned out light tubes to the ceiling fixture.
  • 1180 - Observed that there was no temperature measuring device in the RI Salad Box.
    Provide a thermometer that is scaled in 2 degree increments for this unit.
