    Observation: Observed wall and coving tiles missing and broken in the drive thru area and next to the ice machine.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Observed a heavy accumulation of grease on the floor under the grill. Also, black mold was on the wall under the 3 compartment sink.
    Correction: Clean.

Permit was not posted in view of the public. Water at the hand sinks is 124° which makes it extremely hard to wash hands.

    Observation: Observed the parfaits at 48° in the four door refrigerator that is not closing properly.
    Correction: Moved to another unit.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Observed the door not closing on the four door refrigerator.
    Correction: Repair immediately since unit is not keeping food at proper temperatures.

    Observation: Observed a heavy build-up of ice on the freezer next to the fryers. Also, an accumulation of crumbs from cookies and turnovers was observed in the catch trays on the sides of the old grill.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Observed the chemical system at the 3 compartment sink leaking.
    Correction: Repair.

    Correction: Time control must be used when product is not refrigerated.

    Observation: Observed grease residue on the inside and outside of several of the cleaned hot holding trays.
    Correction: Trays were pulled to be cleaned thoroughly and sanitized.

    Observation: Observed several bottles of different cleaners and insecticide stored on tables and counter throughout the kitchen.
    Correction: Corrected by moving to storage cabinet.

    Correction: Store single service items 6 inches off the floors.

    Observation: Observed coving tiles loose on the floor in-between the ice machine and the warewashing sink. Also low grout and missing tiles were observed on the floor in the drive thru area.

Gloves worn. Discussed freezer defrost - misaligned gasket, towel storage and floor cleaning chemicals. Discussed level of Quat sanitizer used in the 3 compartment sink. 3 compartment sink- Quat sanitizer (ppm?), test kit (ok).

    Observation: Found bottles of spray cleaner and glass cleaner on shelves where food is stored.
    Correction: Store all chemicals properly in designated place.

    Observation: Found employee put on gloves often using just hand sanitizer solution.
    Correction: All employees are to wash hands at appropriate times. Please instruct employees on proper procedure for handwash. (Employee went back and washed hands).
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Found several cloths on equipment instead of in sanitizer.
    Correction: All cloths to be stored in sanitizer. Please store cloth towels in solution when not in use.

    Observation: Found inside ice machine not clean.
    Correction: Please keep baffle clean.

    Correction: All equipment to be in good condition. Please repair the gaskets or replace.

    Observation: Found grease pans and microwave not clean.
    Correction: All nonfood to be kept clean. Please clean these items.

    Correction: All cleaned and sanitized utensils are to be stored in a clean container. Please clean container.
