    Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task. At the time of inspection, I explained to the manager on duty what had taken place - told her that the tray must be washed, rinsed and sanitized properly to prevent cross-contamination.
  • 1570 - Repeat The walk-in freezer was observed in a condition that prevents necessary maintenance and easy cleaning - ice build-up in the unit - the door is being completely closed leading into the walk-in cooler and thus leading to ice build-up.
