The MUT cooler and drawers and Delfield wall cooler do not function and are needed for cold holding. Provide additional refrigeration necessary to maintain food items at 41 degrees or less. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.

Repair the fryer, MUT cooler, and Delfield cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment listed, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
3080 - Less than 10 foot candles of light was noted in the dry storage room and dish area. Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
Comments:
Adequate hi-temp dish machine, sanitizer bucket, quat test kit, and thermometer. Not all employees have signed the employee health policy. All staff needs to have signed copies of the policy by the next routine inspection to avoid violation. Reminder: 1. Wearing gloves does not substitute for regular handwashing. Hands should be washed between glove changes, when switching between different tasks, and doing anything that may contaminate the hands. 2. Make sure to monitor the temperatures of foods being delivered, and recommend that the facility not accept foods that are above 41 degrees. The inspector needs to be notified when the refrigeration has been repaired so it can be reinspected. It is not adequate to fill the MUT drawers with ice and to store meats in them while in operation. The unit must be repaired and functioning before any part of it can be used.
