PIC Demonstrated Knowledge By Stating Hot/Cold Holding Temperatures, Recommend Servsafe
~Self-closers installed on both doors. (Corrected)
~Soap dispensers installed at handsinks and handwashing signs posted. Pumps installed, need handwashing signs.
~Switch fixture replaced in rear freezer room. (Corrected)
~Fire inspection completed. Inspector was just leaving.
~One inch air gap at prep sink and ice machine. (Corrected)
~New compressor installed in Delfield prep unit. (Corrected)
~Air diffusers previously noted with debris build up cleaned. (Corrected)
~Clear sealant placed at tiled entry way to dining area. (Corrected)
~Hot holders not on at time of site visit, ensure holds food product at 135 degrees Fahrenheit or higher.
~White particle board shelf has been removed.
Comments: As was previously discussed please be advised customer restrooms not necessitating travel through the kitchen area are necessary to offer dine-in services. If these restrooms are eliminated will need to consult with both the Building Dept. and Health Dept. and may result in cessation of dine-in services and limited food service option such as carry-out only.
~Quat sanitizer systems installed at mop station/ 3-Vat, keep 200-400 PPM.
