Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Reheat commercially processed RTE food for hot holding to 135F or above.
Comments:
Violation 1530 from the May 29, 2007 inspection and violation 2000 from the February 14, 2006 inspection have been corrected. As you enter the back room, in the right corner a ceiling tile is missing. Insulation is hanging down. Discussed with person-in-charge need to replace missing ceiling tile. Both critical violations noted during this inspection were corrected during the inspection. There are no open violations for this facility. Critical procedures inspection focused on the following today: handwashing, bare hand contact with ready-to-eat foods, food cooking temperatures, hot and cold holding temperatures, and equipment cleaning and sanitization. Discussed employee health program and obtaining food from approved food sources with kitchen staff.

Comments:
Discussed food items and tempertures needed for the food being prepared(precooked turkey). Staff is very knowledable and answered all questions adequately. Discussed employee health and sanitization. Looked over facility to improve equipment. Discussed three compartment sink and the location of the hand sink. The hand sink can be moved to be next to the mop sink as that would still be a easy location for the food employees. Thank you.

Store cookware in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor and inverted to protect the food contact surfaces.
