Repair, adjust thermostat, etc. to restore to a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the reach in cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Pool inspection conducted same day.

Comments:
Pool will be open in June for inspection.Person in charge to call 365-4360 when ready. Sanitizer was at proper concentration. PIC will fax EHSS a copy of employee health policy. EHSS reminded PIC of discard date for RTE food.

December 10, 2007 (Critical Procedures)



Violation: 1700 - Corrected During Inspection Critical Chlorine sanitizing solution used was not at an acceptable concentration(too weak-under 50 ppm).
Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100F.
Comments:
PIC changing owner. EHSS gave application for change of ownership, EHSS observed when testing for hot water at handsinks that timed faucet heads were not calibrated correctly; #1- 60 seconds to reach 100 degrees, #2- 12 seconds to reach 81 degrees, #3- 14 seconds to reach 59 degrees. To corrrect: adjust faucets to proper timing of 15 seconds and to reach a mixed temperature of required 100 degrees.

Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours.
Comments:
- Kenmore refrigerator unit observed at 50 degrees, by 3/01/2007 all refrigeration equipment must be at 41 degrees or below.
- EHS spoke to the person in charge and provided a handout on staff food stored in the same refrigerator as day care food.

    Clean and sanitize these surfaces for food contact.
  • 2350 - Critical The upstairs kids toilet does not flush properly.
    All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment.
  • 3330 - Corrected During Inspection Critical Working containers of bleach water are not properly labeled.
    Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
Comments:
PIC placed a call to plumber while EHS was onsite. VEry cooperative staff, owner.

  • 0470 - Corrected During Inspection Critical Raw animal food stored over ready-to-eat (RTE) food in the refrigeration unit.
    Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • 0830 - Corrected During Inspection Critical The prepared ready-to-eat (RTE) bologna in the refrigeration unit is not properly dated for disposition.
    Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days or within 4 calendar days if held at 45F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • 1700 - Corrected During Inspection Critical Chlorine sanitizing solution used was not at an acceptable concentration.
    Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.
  • 1770 A - Corrected During Inspection Critical The following equipment food-contact surfaces were observed soiled to sight and touch: Microwave.
    Clean and sanitize these surfaces for food contact.
Comments:
EHS suggested using an eye dropper to dispense chlorine into water to acquire proper sanitizer concentration.

Utilize only sanitizing agent that meet the requirements of 21 CFR 178.1010 when applying to food contact surfaces. Sanitizer needs to be 50 ppm. Use test strips to obtain a safe concentration of 50 ppm.

    Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • 2890 - Light bulb in GE freezer is not shielded, coated, or otherwise shatter-resistant.
    Shield or replace light bulb with a coated or shatter-resistant bulb.
  • 3170 - Gaps were observed around the pipes under the mop sink. Gaps were observed in the wall and ceiling in the storage room. These areas are not maintained in good repair

    Ensure this area is cleaned as often as necessary to keep them clean to sight and touch.

    Employees shall have designated areas for the storage of their personal items. Ensure personal drink and food items are stored in this designated area.

June 26, 2003 (Routine)



Violation: 2350 ii - Repeat Plumbing connections at the three compartment sink are leaking.
Plumbing systems and components shall be maintained in good repair.
Comments:
Pool was inspected at the time of the follow-up. The pH was found to be 7.4 and the Chlorine level was 1.0. 1)No flow meter was observed. The pool water should be completely circulated every 6 to 8 hours. For an 8000 gallon pool the flow rate should be 17 to 23 gallons per minute. 2) Depth markings shall be placed on the deck. They will be highly contrasted and large enough to be clearly visible. 3) Chlorine tablets were observed in the skimmer. Chlorine tablets are within easy reach of children. Alternate chlorination method should be investigated.

    Clean the sink compartment(s) or drainboards: 1) before use. 2) throughout the day at a frequency to prevent contamination of food, sanitized equipment and utensils. and 3) if used, at every least 24 hours. Corrected at the time of inspection.
  • 1750 - Manufacturer containers were observed stored in dry storage room for reuse.
    Discontinue the reuse of single-use containers. Provide approved reusable food storage containers designed for your food storage needs. Containers discarded at the time of inspection.
  • 2000 - Several coolers were found stored on the floor in the kitchen.
    Store coolers in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
  • 2020 - Unwrapped spoons were not stored in kitchen with the handles up.

    Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
  • 3300 - Facility is storing unnecessary items to the operation or maintenance of the establishment. Gaps around pipes in facility allowing the entrance of rodents.
    Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents. Provide sealant to minimize the entrance of rodents into kitchen.
