0830 - Critical The prepared ready-to-eat (RTE) foods in the refrigeration unit is not properly dated for disposition. Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
1720 - A sanitizer test kit is not being used to ensure the chemical sanitizing solution for the dishwasher final rinse is at the proper concentration. (Quat test strips are provided) Provide a chlorine chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
2230 - Critical Hand sink in dish washing area not working. Repair sink in order to provide needed hand washing sink in this area.
2810 - Wall section missing behind cook equipment and tile floor at dishwasher has missing grout resulting in standing water. Replace wall section with washable surface and repair floor.
3030 - No disposable towels were provided at the hand washing lavatory in the kitchen food prep area and the secondary food service area. Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
3300 - Unused items in floor next to sink in secondary service food prep area. Remove all unnecessary items from the facility. The presence of unnecessary articles, including equipment which is no longer used, makes regular and effective cleaning more difficult and less likely. It can also provide harborage for insects and rodents.
Dishwasher final rinse at 75 PPM chlorine. Good Wiping cloth sanitizing solution at 200 PPM Quat ammouium. Good Note: No plan review form or plans supplied to Health Department for the new dining room food service area.

1090 - Critical A temperature measuring device with an unshielded glass stem or sensor was observed in the establishment. Remove the glass temperature measuring device from the facility to prevent glass shard contamination of food in case of breakage.
1330 - There is no data plate on the warewashing machine. Provide a data plate for the warewashing machine that lists the machine's design and operating specifications.
This facility is making good progress in safety and sanitation. The kitchen manager is conscientious and professional.
