Basting brush is not cleanable. Discussed this with manager at last inspection. Brush was thrown out. Talked with manager about a brush which can be cleaned. Fods in walkin were at proper temperatures, but walkin was blowing 50F air. Maintenance was called and the walkin was repaired.

Complaint of foodborne illness. Dec 14, 2006: Spoke with manager of facility. Potatoes are stored and cooked to proper temperatures. Held above 140F. Prime rib in cooler was from approved source and fresh. Unable to observe prime rib cooked at this time. Proper steps were disclosed on cooking prime rib to appropriate temperatures. Unknown if complaint is valid at this time.
